Gluten Free Potato Scones
Anyone who knows me, knows I love potatoes; I have never met a potato recipe that didn't fill me with pleasure! This recipe is great as a main course for my gluten free guests. It can be topped with creamy cheese, toasted nuts or fruit compote so it can go either sweet or savoury.

Takes: 20 minutes
2 medium baking potato
2 tbsp melted butter
2/3 cup flour -- gluten free
1 tablespoon baking powder
½ tsp salt
2 tbsp melted butter
grapeseed oil/butter/bacon fat for frying
Bake potatoes and scoop out pulp into a bowl, mash well with butter.
Mix flour, salt and baking powder together and stir into potatoes to make a dough.
Divide the dough into three equal balls then sprinkle a little gluten free flour onto your work surface and roll the balls into circles approximately ½cm thick.
Cut each circle into four then heat a cast iron frying pan on medium-high heat and oil.

Cook in batches of four for 3-4 minutes on each side then cool slightly on a wire rack before serving.
