Rosehurst Apple Ketchup

No Heinz in my house. This applesauce and stevia sweetened recipe tastes fresh and turns ketchup from sugar-laden red stuff into an egg enhancing vegetable topping! Not that I am a breakfast expert or anything ( ok, I am), but so far it is about 8 to 1 AGAINST ketchup on eggs; for what it's worth. There are more takers when homemade is at hand, but still.


Makes: 48 servings

Takes: 15 minutes

3 1/3 cup canned pureed tomatoes pureed (1 can 796 ml)

1 Tablespoon Italian seasoning

1/2 cup unsweetened applesauce

2 Tbsp brown sugar or 1 tbsp stevia

1/4 cup apple cider vinegar

2 tablespoons potato starch

optional: pinch of cayenne and twist of smoked salt to make a hot ketchup

Simmer all ingredients, seasoning, brown sugar and vinegar for 10 minutes. Remove from heat.

Puree with a wand.

Whisk in potato starch and simmer for another 2 minutes to thicken.

Stores in fridge 3-4 weeks, Freezer 6 months.
